Coconut Joy Chocolate Tarte (FM)

*yields 3-4 small portions – it’s very filling and quite calorie dense, take you time when eating 🙂

Ingredients for the non-bake crust:
1/2 cup almond flour
2 tbsp unsalted butter
1 tbsp unsweetened cocoa powder
2 tbsp powdered sugar substitute (I use Swerve)

Ingredients for the coconut joy filling:
1/2 cup  heavy cream
1/4 cup powdered sweetener (I use Swerve)
1/4 cup unsweetened shredded coconut
1/4 tsp almond extract
1/4 tsp xanthan gum

Chocolate topping:
1/4 cup heavy cream
1 oz unsweetened chocolate finely chopped (100 % cocoa)
2 tbsp powdered sugar substitute (Swerve)
1/4 tsp vanilla extract

Instructions:

  1. In a medium bowl combine the almond flour, butter, cocoa powder and sugar substitute. Stir well until a most dough is formed.
  2. Press the dough into a small tart dish (5″ in diameter) and set aside.
  3. Make the coconut joy filling: in a small sauce pan over medium heat bring cream into a simmer and cook for 2 minutes. Take it from the heat and add the sweetener and almond extract. Mix well. Then sprinkle the xanthan gum over the top of the mixture and stir well for a minute. Add the shredded coconut, mix well and let it cool down for 5-10 minutes.
  4. Press the coconut mixture into the tart dish on top of the chocolate almond crush.
  5. In a small sauce pan melt over medium heat combine the sweetener and cream. Bring to a simmer, then remove from heat and add the chopped chocolate and vanilla extract. Let it sit for 5 minutes and then whisk until smooth.
  6. Pour the chocolate over the top of the coconut joy filling and smooth it out.
  7. Place the tart dish into the fridge for about 15-20 minutes before serving.

    It looks really good!!!
    I need to find xantham gum though. Otherwise it won’t hold well, I guess?

      Yes, it makes a big difference in how stuff holds together. Did some gluten free pancakes with and without it. The ones with it acted pretty much as normal pancakes the others I would lift the flipper and all that would come up is the shape of the flipper. The rest of the circle of the pancake was still in the frying pan! 😀

        Thanks Chris! One of my cooking experience once turned just as you described. I had no luck finding xantham gum, unfortunately. So I modified the recipe and it turned out good anyways. It yielded 4 portions (tiny, but calorie dense).

            Thank you! Haven’t thought of looking on Amazon.
            Everything here in Canada is more expensive than in the US… haha.
            But it’s not so bad. Quantities are small in the recipes so I guess it would last for a long time. 🙂

    Just made these. They are in the fridge awaiting consumption 😊😋 The coconut mixture never got thick for me even with the xantham gum. I don’t think it will effect the flavor though, and it may harden after the fridge. Either way im excited for the treat !

    Dear Zuzka I was wondering if you and your team could….oops “Go Team Zuzka” …
    If you all could put a section for videos separate so I and others can easily find a video of you cooking posted items for a better result. I am very unskilled in the kitchen and the videos are a Tremendous help.
    Also if it’s possible can you put the search bar up at the top of every page as it is wedged down the pg in the middle and sometimes it doesn’t appear. Plz your site is really really functional otherwise, but this is a real hazzle to find a video recipe.
    Thank you now I’m off to do a bunny slope THANK YOU SO MUCH FOR THIS WHOLE THING I LOVE IT even if it doesn’t change at all !!!

    Made it last night with pistachios and walnuts (because I didn’t have the coconut) and we downed the whole thing! It’s really good!
