Arugula Salad with Pomegranate (FM)

Ingredients:
1/2 avocado chopped
1 1/2 cup arugula
1 red bell pepper
3 scallions
1/3 cup pomegranate seeds
1 tbsp freshly grated parmesan cheese (optional)
Basil vinaigrette:
2 tbsp extra virgin olive oil
2 tsp lemon juice
1 tbsp fresh parsley
2 tbsp fresh basil
pinch of sea salt
pinch of fresh ground black pepper
1 tbsp pomegranate seeds
Instructions:
- Add all the ingredients into a large salad bowl
- Add all the ingredients for the vinaigrette into a small blender (I use my Magic Bullet) and mix until smooth/
- Pour the vinaigrette over the salad and gently toss. Serve.
