Baked Parmesan Zuchini Sticks (FM)

Ingredients:
1 large zucchini
1 large egg
salt & pepper
1/2 cup almond flour
1/4 cup flaxseed meal
1/2 cup finely shredded Parmesan cheese
Mayo or avocado mayo
Instructions:
- Preheat the oven to 425F degrees.
- Line a baking sheet with payment paper or a non-stick liner.
- Slice the zucchini in half and then slice each half into 3 equal sticks.
- Crack the egg into a deep plate and whisk. Season with salt & pepper.
- Combine the almond flour, flaxseed meal, and Parmesan cheese in a deep plate.
- Dip each zucchini stick in the egg and then coat with the almond flour mixture.
- Place the zucchini sticks 2 inches apart on the prepared baking sheet and bake for 20 minutes or until they turn golden. Serve warm with mayo.
