Buckwheat Porridge (FM)

Buckwheat is often presented as one of the healthiest grains, but it’s actually fruit seed that belongs to the same category as rhubarb and sorrel, which makes it naturally gluten free and safe for anyone with celiac disease or gluten sensitivity. Buckwheat is groats are an excellent source of protein, fiber,  vitamins and minerals. Buckwheat porridge has a naturally sweet, nutty taste and some of the health benefits include digestive help,  blood sugar management, and anti-inflammation properties. You can also use buckwheat to make your own super healthy gluten free buckwheat bread.

*yields 1 portion 

Ingredients:
1/3 cup buckwheat groats
1 cup water (for soaking)
1/2 cup coconut milk
1 tbsp Swerve sweetener
1/4 tsp cinnamon

Optional toppings:
1/2 banana sliced
1 tbsp sliced almonds
1 tbsp dried cranberries

Instructions:

  1. Soak the groats over night in 1 cup of water.
  2. Strain the groat and try to get rid off as much of the slime as possible without rinsing.
  3. Combine the groats with coconut milk, sweetener and cinnamon in a small sauce pan, brink to boil and cook for 4-5 minutes until the mixture thickens.
  4. Pour the porridge into a bowl. You can eat it plain or add some toppings like fresh fruit, dried fruit, nuts and seeds.

Protein: 8.3 g

    I used to eat buckweat, but not on the approved list for lectin avoidance (read the plant paradox by dr Gundry)
    I go back to millet (common in Switzerland) and need to find sorghum now.

    OMG Z, this looks so yummy. I was an oatmeal person, but I tended to feel bloated and very stuffed after eating it. SO far I am on day 6 of Earning my carbs and I am feeling amazing. You are def. my role model and my hero. You are truly the best. Your workout and nutrition tips are helping me so much.

    3th day I eat this for breakfast,so yummy with chia seeds,pshillium husk,fresh fruit(raspberry,strawberry or pomegranate. After I doesn’t feel hungry 5-6hours! Perfect!

    oh wow! i have lost my brain(going to blame on being pregnant). Came to peek at all these good looking buckwheat recipes only to realize my poor lapsing brain got BARLEY at the store last night. oh my…frustrating. Prego-Brain is real and apparently a losing battle at the moment. Try again tomorrow i guess.

      Not all “carbs” are the same, nor can we equate all carbohydrate rich foods. Buckwheat is a complete food made up of many components. I suggest researching buckwheat and fermentation of grains. You’ll see what I mean.

    Hi Zuzka,
    Can you explain to me in simple terms why buckwheat is ok on a LCHF diet? Even though it is super high in carbs. Thx!

      It doesn’t spike your blood sugar levels – it’s a slow carb or sometimes also called smart carb.
