Low Carb Gooey Peanut Butter Brownies (FM)

Ingredients:
4 oz (113g) Dark Unsweetened Chocolate Bar (I used 100% cacao)
1 cup almond flour
5 eggs
2 1/2 cups Powdered Erythritol (I use Swerve)
1 pkg. (8 oz) Cream Cheese (I use Philadelphia Original)
1/2 cup creamy peanut butter
1/4 cup creamy almond butter
1 tbsp coconut oil
3/4 cup unsalted grass-fed butter

Instructions:

  1. Preheat the oven to 350F. Line a 13 x 9 inch baking pan with parchment paper or foil with the ends extended over the sides.
  2. Break the chocolate bar into small pieces and microwave it in a large microwavable bowl with the butter on high for about 2 minutes. Stir until the chocolate melts completely and blends well with the butter.
  3. Add 2 cups Erythritol and mix well. Then stir in 4 eggs. Add the almond flour, mix until well combined and pour the mixture into the prepared baking pan.
  4. Melt the cream cheese in the microwave for about 40 seconds on high and then mix it in a large bowl with coconut oil, peanut butter, almond butter and 1/2 cup erythritol. Stir in the remaining egg and mix well until smooth and well combined.
  5. Drop the peanut butter mixture in spoonfuls over the brownie batter and swirl gently with knife. Bake for 35-40 minutes in the middle of the oven. Don’t over bake. A tooth pick inserted into the middle should come out with fudgy crumbs.
  6. Let the brownie cool down for about 20 minutes and then use the foil or parchment paper handles to take it out of the pan before you slice. You can eat your brownies warm or enjoy them at a room temperature. Store covered in the refrigerator.

Note: This is for the entire recipe, not individual portions, which are going to vary depending on both the size and amount of brownies you’re going to eat. Just like you wouldn’t consume an entire cake or container of ice cream, you wouldn’t be choking down this entire recipe in one go. Relax, enjoy the treat, and be mindful of your portions.

    I am assuming these can be consumed as a small desert on KEto? I love chocolate and peanut butter. Making these tonight. I have found that i do better with a higher fat, moderate protein, low carb diet. I have tested lots of veggies and low to no veggies and found as long as i am low grain/processed carb with the higher fat, that i feel better and the amount of veggies does not make a difference for me. I include them of course, but do not panic if they are not available at a meal. I have found the higher protein, moderate fat causes me to want something sweet afterwards. I know it is said that keto can be hard to sustain, but if you have stuff prepared and you know you feel your best when eating this way, it really is not that hard. Plus I am not starving or craving. I also keep a stash of homemade broth/stock around. I am making some now.

      Hi Tracey , great on your discovery ! Thars interesting to note regarding veggies . Your comment ‘ do not panic if they are not available..’ resonated with me. I’m a vegetarian and follow a low carb eating plan as Z advocates in ZGYM . Since Z mentioned Keto I tried following and have noticed improvements too. What’s your macro percentages ? Currently I’m consuming aroun 50-60% fat ,20% protein,20-30% carbs.

        I don’t count macros and such, at least yet. I just go by sight i guess. For example, i love bullet proof coffee. After my workout, i only had time for a shake. So, i used my collagen protein powder. I was out of canned coconut milk, so i used my almond butter, just a little more than i normally would, and added MCT oil since my shake was cold. I am still FULL! I normally add some greens, but was rushing. Now, if i would have used just a small amount of fat, i would be starving and craving right now. I have really become aware of my body over the years and i think getting away from the “diet” mentality has really helped with that. I made some meatballs the other night served with umm not collard or mustard greens, but some type of greens with some pecans and sherry/oil/ vinergeratte, sauted. It was delicious. I used can cocounut milk and homemade broth as base. Mixed the balls, with parmasean cheese and egg. I found i did not need much to be satisfied and no cravings for sweets. I have a couple college boys living with us from the college my son still attends and one is obese. I have been helping him and feeding him this way of eating as i am. He also has very high blood pressure and cholesteral. Well, he just came back from doctor and lost 15lbs, and now his blood pressure and cholesteral is normal. He still has a far way to go, but i am so happy for him. How are you keeping track???

          Lovely to hear from you and thanks for your insights . I normally don’t count macros but do count calories . Just started with macros this week to be aware of how I’m doing pertaining to fat . I must admit I’m slowly letting go of my “fear” of consuming too much fat ….Growing up iin the 80’s low Tfat was the mantra , I’m 52 btw. Afraid adding too much fat and ill go over my total calories for the day , though I know I shouldn’t be too bothered about that ! But I’ve been doing bulletproof coffee every morning for over a year aoa table each of butter and coconut oil, collagen powder and a teaspoon cacao powder and cinnamon sprinkled on top . Love it and keeps me full for sure.Then after my workout I’ll usually have a green smoothie ( spinach, cucumber, ginger, mango) protein powder blended and topped with ground flaxseeds and berries . For snack , typically some nuts/ peanut or almond butter/ some cheese. Dinner would be 2 eggs , half avocado and lots of veggies ( broccoli, French beans , cauliflower etc)cooked with olive oil or coconut oil. I guess I need to up my fat intake without fearing. Also wondering weather too much veg , I’ll be way overload on carbs ( I’ve read it should be fine as I don’t eat grains or starchy veg) I love veg and being a vegetarian it’s like my staple ! You mentioned it made no difference cutting out
          veg… I must learn not to panic if I don’t have a lot 😃 Great news about the boy getting on track with his health , what a wonderful thing you’re doing .

    I may use 85% chocolate and less Swerve. If I use 2 1/2 cups my tummy will scream at me later! 😆
    Have you tried this with a mixture of Swerve and Stevia? I have Stevia Glycerite which is a lot less bitter.

      I just made them and even 2 cups swerve are way too much. They are too sweet for me. I gotta throw them out and make new ones with less swerve.

          Yep. I just had to throw out a whole recipe because I just cannot eat them. Learned from it and will adjust the recipe to my sweetness. 🙂

    Really 2.5 cups sweetener?? That’s a lot!! I might try these with less, as I imagine they will be extremely sweet with that amount.. peanut butter and chocolate is always a winner though !

      I agree, I don’t like to use sweetener, because they inevitably do raise insulin still, and I also have grown accustomed to less sweet tastes now. Did you try this recipe with less? How’d it go?

        i used 2/3 cup of granulated sweetner and some stevia. Just taste the batter! They turned out really well, sorry for the late reply 🙂

    what can i substitute for the swerve? i prefer more natural sweetness …. honey, maple syrup, stevia….even xylitol…
