Lemon and Artichoke Chicken Thigh Dinner (FM)

*This recipe makes 4 portions

Ingredients:
4 bone-in, skin-on chicken thighs
2 tablespoon olive oil
1/4 red onion, sliced
1 tablespoon capers, rinsed and drained
3/4 cup chicken stock
1 lemon
14 oz can artichoke hearts (drain and chop them)
2 1/2 cups roughly chopped spinach
1 cup cherry tomatoes, halved
salt & pepper to taste

Instructions:

  1. preheat oven to 425, paper towel dry the chicken thighs and season with salt and pepper.
  2. in a large, oven-safe saute pan add olive oil over medium-high heat. After the oil is hot, add the chicken thighs skin side down and don’t touch for 5-6 minutes until skin is crispy.
  3. flip the chicken thighs and move over to one side of the pan and add the onions, stirring often until soft.
  4. add the capers, chicken stock and half the lemon (sliced into quarters) let simmer over medium heat to reduce for 5 minutes. Flip the chicken breast so the skin side up again and put the pan in the oven for 20 minutes.
  5. remove from oven and put on the stove top, using a tong take the chicken thighs out and plate them then cover with foil and set aside.
  6. being careful because the pan handle is still hot, set the oven to medium heat and add the artichoke and spinach, stir often until the spinach is wilted about 5 minutes then add the tomatoes, the juice from the remaining half of the lemon and season with salt and pepper.
  7. cook until warm throughout then portion out on to plates and top with chicken thighs.

      It’s one can of artichoke hearts – drained. I buy the one from Native Forest.

    I’m making this today. Super delish. I had clotted cream, strawberries and grain free Elizabeth granola for breakfast (warmed). It was so good it should be illegal.
