Spaghetti Squash with Chicken, Mushrooms, and Parmesan (FM)

*yields 2 large portions or 3 small portions (macros based on 2)
Ingredients
2 chicken breasts, chopped
3 1/2 cups cooked spaghetti squash
2 cups chopped mushrooms
1 tbsp fresh thyme
1/3 cup parmesan cheese grated
2 garlic cloves minced
1/4 cup fresh parsley finely chopped
Salt&pepper
Avocado oil (or other oil that you like to sauté with)
Olive oil
Instructions
- Preheat oven to 400F degree. Cut the spaghetti squash in half lengthwise, seed it, drizzle with 2 tbsp of olive oil and season with salt & pepper. Place cut side down on a parchment paper lined baking tray. Bake for 50 minutes to 1 hour. Take out and let it cool down.
- In a large skillet, preheat 2 tbsp avocado oil over high heat and add the chicken tender pieces. Sear the chicken all over for about 2 minutes, then reduce the heat to medium/high and cover with lid. Cook for 4 minutes, stir, cover and cook for 3 more minutes. Transfer the chicken pieces on a plate and set aside.
- Use the same skillet, add one tbsp of avocado oil, add the garlic, thyme, and mushrooms and sauté for about 5-7 minutes over medium heat until mushrooms turn golden brown. Turn off the heat and set aside.
- Scrape the squash into strings with a fork and add them to the skillet. Add the grated parmesan cheese and warm up over low heat. Add the chicken, combine and sprinkle with a handful of fresh parsley. Serve.

Hello Z, it is not the first time me and my partner were trying your recipes. First, when I told him I would make a recipe from you, he was like… rolling eyes 😀 Now, when I say I am going to do your dish, he is like “Great!”. And you proved again that your recipes are great, he ate it like nothing asking me, if there is more spaghetti 🙂 I have to say I made one exchange (instead squash I used semolina spaghetti), but we loved it. Tomorrow I am going to cook another great stuff from you.. Cauliflower with chicken and coconut sauce 🙂 Cant wait.
