Mushroom Stroganoff with Cauliflower Rice (FM)

*this makes about 3 small servings or 2 large ones 🙂 (the macros are based on 2 large portions)
Ingredients:
1 head of cauliflower, riced with a food processor
1 tablespoon olive oil
3 cups chopped mushrooms
3 garlic cloves
3 green onions, diced (makes about 1/4 cup)
2 tablespoons cooking wine
4 tablespoons vegetable broth
1 tablespoon dried thyme
1/4 cup sour cream
salt & pepper to taste
Instructions:
- In a large skillet over medium high heat, drizzle on the olive oil. Â Once it’s hot add the mushrooms and stir occasionally about 5 minutes until tender.
- Add the garlic and green onions, stirring about 1-2 minutes until the garlic is fragrant.
- Add the cooking wine and let simmer 2-3 minutes then add the vegetable broth and cauliflower.
- Stir to mix and let cook 3-5 minutes until the cauliflower is tender and most of the liquid is cooked out.
- Add the sour cream and fresh thyme, stir to mix well and let cook for an additional minute until warm throughout and then portion into bowl and enjoy 🙂

i love cauliflower and love the idea of swapping rice and other high carb stuff with it! you can eat all your favourites using cauliflower instead of rice, i totally love it!

Holy cow this was good and felt like comfort food on this cold, snowy day. I didn’t have cooking wine, but I used lemon juice and chicken broth and it was absolutely delicious. Thank you!

Delicious Meal once again!!!!!! love this meal plan!!!! Since I have started, like 7 weeks ago I lost fat and gained muscle. In fact, I measured my fat/muscle with Skulpt and I went from 22.4% to 20.2% in fat and as far muscle is concerned I went from 64.5% to 71.7%!!! Zuzka has a fantastic program!! Great recipes and workouts!!!! You definitely lose fat and gain lean muscle!!!
