*Yields 2 Portions

Ingredients
2 large tuna steaks
2 tbsp avocado oil
3 tbsp butter
1/3 cup thinly sliced green onions
1/4 cup chopped cilantro
2 tablespoons fresh grated ginger
4 garlic cloves finely chopped
8 ounces shiitake mushrooms sliced
6 tbsp soy sauce (low sodium)
2 tbsp fresh lime juice
2 cans (13.5 oz) coconut milk – use only the thick cream (you can save the coconut water from the cans for your smoothies)
1/2 tsp xanthan gum

Instructions

  1. Preheat oven to 200F degree.
  2. Season one side of tuna steaks with pepper.
  3. Heat 2 tbsp oil in a large skillet over high heat.
  4. Place tuna steaks peppered side down into the hot oil and sear for 2 minutes. Turn over and sear the other side for another 2 minutes for medium rare.
  5. Transfer tuna into a baking sheet and keep warm in the oven while you make the sauce.
  6. Add butter, green onions, cilantro, and garlic into the same skillet and sauté until fragrant for about 30 seconds, then add mushrooms.
  7. Mix the soy sauce with grated ginger, mix well and pour into the skillet.
  8. Add the coconut cream, and lemon juice. Sprinkle the xanhtan gum all over the coconut mixture and then stir and cook for about 3 more minutes until the sauce coats back of spoon.
  9. Spoon sauce onto plates and arrange the tuna steaks atop sauce. Garnish with lime wedges and fresh cilantro.

This was really good, it got lots of compliments from my husband too.
Had alot of extra sauce left, hoping it holds up as leftovers to put over some chicken for tomorrows dinner.

The sauce was to die for. SOOOOO good! The tuna was a little more done than I prefer so I think next time I will cook the tuna after I make the sauce because it ended up sitting in the oven for a while. I made it for my husband with chicken because he doesn’t like fish and he thought it was really good too.
