Zucchini and Carrot Parmesan Crisps (FM)

zucchini carrot crisps

*This recipes makes approx. 16 crisps. I recommend one serving to be about 4 crisps, that’s what I enjoy as one serving.
**1 portion = 4 crisps; 4 portions total

Ingredients:
3/4 cup shredded zucchini
3/4 cup shredded carrots
1 1/2 cup shredded parmesan
1/2 cup grated parmesan
coconut oil (for greasing the paper)
Optional: 1 large egg (I’ve gotten feedback that this makes it easier for everything to bind together; they also come out much tastier!)

Instructions:

  1. Preheat oven to 375 degree F. Lightly grease the paper with some coconut oil so the crisps don’t stick.
  2. Shred your zucchini and carrots and use a paper towel to remove as much excess moisture as possible.
  3. In a medium mixing bowl add the shredded carrots and zucchini and mix with the shredded and grated parmesan cheese.
  4. Line a baking sheet with parchment paper and grease lightly with coconut oil. Spoon out balls of about 1 1/2 tablespoons of the mix onto the baking sheet and flatten with your hand until it’s about 1/4 inch thick.
  5. Bake in the oven for 10 minutes, the crisps should be bubbled up and browned around the edges.  Remove from oven and let sit for at least 5 minutes before using a spatula to remove and set aside until completely cool.  Continue this step until all the mix has been baked into crisps. Then enjoy!

    So, this is a meal not a snack right? How long after you eat this FM before you eat another meal? How do you stay satiated from eating so little? I mean, I understand that it’s caloric dense because of the cheese so it probably qualifies as a meal…it just seems like hardly any food.

      I think this is just a snack. The real question is how to avoid constipation on this kind of high cheese (and eggs) diet 🙂

        I wonder if it depends on the individual and/or type of cheese? I love cheese, but have never had any constipation problems, even though I eat it a lot (and at least 1 egg a day). My husband, on the other hand, is pretty sensitive and can get bloated pretty easily from it. We HAVE, however, noticed my husband has no problems when we buy it organic (and from a local farm). We switched *one* time recently since we couldn’t make it to the farm, and my husband was having major digestive problems. So no more of that for us! The downside is, it’s very expensive; but the plus side is…at that price, we’re more likely to portion it out and not go TOO crazy with it. 😉

    This is absolutely amazing. All your recipes are so fun and sound delicious, Zuzka. But I am so incredibly busy that I barely have any time for recipes, and can’t really buy ingredients that I don’t use a lot. But this recipe is so simple, extremely easy, and looks very, very quick. The savory nature is perfect. I will try it adding a bunch of parsely and dill, maybe basil. 🙂 Thank you!

    I just made these and they didn’t turn out how I expected. I thought they would get crispy. They also melted all together so not individual circles. Maybe I did something wrong. They taste great though.

    Got to thinking that maybe I didn’t squeeze enough water out of the zucchini and carrots….?

    I finally got all the ingredients and mixed it in a bowl and it’s all dry. Did Zuzka leave out egg for moisture and to bind it together?

      Ok I went ahead and added a beaten egg and they came out cheesy chewy yummy and we dipped them in healthy marinara. OMG! Good stuff. 🙂
