Healthier "Alfredo" Sauce Alternative (FM)

I saw this recipe recently and just had to try it and you know what, it was delicious!

This recipes makes approx. 3 cups of sauce. You can easily keep this in the fridge for 5-7 days to use in any way you see fit! I’m going to add this sauce to pasta (after a workout of course) and to some chicken and veggies as a healthier alternative to alfredo sauce.  🙂

Ingredients:
1 head of cauliflower
1 whole bulb of roasted garlic (approx. 7 cloves)
1/2 cup chicken stock (or veggie stock)
1/4 cup heavy cream
1 tablespoon butter
1/2 cup grated parmesan cheese
olive oil
salt & pepper to taste

Instructions:

  1. Preheat your oven to 400 degree F.
  2. Remove the outer paper from the garlic bulb so that just the individual clove shells are remaining.  Cut the top off the bulb so that the cloves are showing, drizzle with olive oil and wrap in foil.  Let roast for 30-35 minutes.
  3. Cut the cauliflower florets off the head and add to a large pot of water. Bring the water and cauliflower to a boil and let boil for approx. 10 minutes until cauliflower is very tender and easily pierces with a fork.
  4. Add the cauliflower to a food processor (I highly recommend a vitamix or other high process blender to help make it smooth) and let cool until garlic is done roasting.
  5. Squeeze the individual garlic cloves out of their shell and add to the cauliflower.
  6. Add the stock, butter, heavy cream, parmesan cheese, and salt/pepper to the cauliflower and blend on high until smooth.  (Add more stock or cream until desired consistency, creamy smooth)
  7. You can use immediately or store in a mason jar or tupperware until ready to use 🙂

Note: This is for the entire recipe, not individual portions, which are going to vary depending on both the size and amount you’re going to eat.

    My boyfriend LOVES alfredo. I made your other alfredo sauce with egg noodles last sunday. I’ll try this one too. I love your recipes! Thank you so much, Zuzka. I made your pecan coconut bar this AM after all the workouts. DELISH!

    I will do it but with coconut milk… I love cawliflower and coconut.. they are BFF

      I never get heavy cream, and I looked up online for an alternative. I saw that you can use cream cheese but just half the portion. So if a recipe asks for 1/2 cup of heavy cream then use 1/4 cup cream cheese. I have been doing that and everything tastes great! My boyfriend approves, and he’s hard to please lol
