Low Carb Breakfast Burrito (FM)

*yields two crepes

Ingredients for the crepes:
2 eggs
2 tbsp heavy cream
salt & pepper
1 tbsp butter

Toppings:
2 strips of bacon cooked
1/2 avocado sliced or cubed
1 scallion finely chopped
1/3 cup of chopped lettuce
2 tbsp mayo

Instructions:

  1. Melt 1/2 tbsp of the butter in a frying pan over medium heat, then add half of the egg mixture and move the pan to let the mixture spread into a round shape. Cover with a lid and cook for about 30 seconds to a minute. When you’re able move the crepe in the pan by shaking it, flip it over with a spatula and cook for half the time. Remove from the pan onto a plate. Repeat with the remaining butter and egg mixture.
  2. Divide the toppings evenly on top of each crepe and roll them up. Enjoy!

      I’m pretty sure it’s 2 servings. This is what I came up with for this recipe all together..

      Calories 770
      Protein 20g
      Carbs 10g (fibre 6g)
      Fat 72g

    I made this for lunch today, and it was so good! I modified it a bit to work with what I had on hand and to make it vegetarian. I used 2 T sour cream instead of heavy cream (actually, this was because I like the flavor better), and I filled it with cottage cheese, baby kale, and sliced scallions. Mine came out to 370 calories and 21g protein for both “burritos.” Paired with a small glass of milk (about 1/2-2/3 cup, I think) and some cherries, this was an awesome lunch!

      2 crepes. I would eat only one, but my boyfriend’s portion is two crepes.
