Creamy Mushroom and Chicken Crepes (FM) - Low Carb

*yields 4 portions

Ingredients
4 eggs
1 cup heavy cream
1 cup sliced mushrooms
1/2 cup sliced onions
4 bacon slices
1 cup cooked, grilled or baked chicken pieces
oil for cooking
salt & pepper to taste

Instructions

  1. Whisk the eggs together with 1/4 cup heavy cream and season with a pinch of salt and pepper.
  2. Heat up about a tablespoon of oil in a medium size sauce pan and pour 1/4 of the egg mixture into the pan. Cover with lid and cook for about a minute or until the crepe moves when you shake the pan and the bottom is turning light brown. Gently flip over with a spatula and cook for at least half the time. Place on a plate. Repeat 3 more times until you use up the egg mixture.
  3. Cook the bacon slices until crisp and place them on a paper towel to get rid off the excess of fat.
  4. Pour out the extra grease out of the pan but don’t scrub and use the same pan to sauté the onions and mushrooms – over medium heat for about 4 minutes. Add the bacon bits, cooked chicken pieces and 3/4 of the heavy cream. Cook until the cream is hot and has thickened slightly. Season with salt and pepper to taste.
  5. Divide the creamy chicken mixture equally between the 4 crepes and and fold them

    Yummy, i’ll be trying these tonight. Only, instead of heavy cream I’m planning on using cream cheese :p
