Anti-aging Strawberry Summer Salad (FM)

Ingredients:
4 cups fresh spinach
10 fresh and quartered strawberries
1 pink grapefruit chopped
1 jalapeño seeded and chopped into small pieces
2-3 tbsp sunflower seeds
2 tbsp extra virgin olive oil
1 tsp honey
1/2 tsp fine grain sea salt
1 tbsp fresh lime juice
1 tbsp pink grapefruit zest
Instructions:
- Add the spinach into a large bowl.
- Add the olive oil, lime juice, honey and zest into a small bowl and mix well. Then pour the mixture over the spinach and rub it well into the spinach leaves. I use my hands (washed of course) to get the leaves coated.
- Add the grapefruit, strawberries, and jalapeño on top of the spinach. Sprinkle with sunflower seeds and serve.

Yum! I’m going to make this tomorrow night for dinner and add grilled shrimp. My husband and are seriously in to eating a variety of fresh green salads almost every single evening as a side or main dish.

Tried it today and…. FANTASTIC! It was soooooo good. Thank you Z! This had a mix of all my favorite flavors; sweet, sour spicy. I felt amazing and satisfied after eating it. So excited to put this in my book of fav recipes!
