Chicken Salad Sandwich (FM)

*This salad yields 2 portions – one portions is served with one slice of bread
INGREDIENTS
- 2 diced poached chicken breasts, recipe follows
- 2 stalk celery, chopped into tiny pieces
- 1/2 tbsp sweet onion, finely chopped
- 1 tsp finely chopped fresh tarragon or fresh dill
- 1 tbsp finely chopped parsley
- 1/4 cup Paleo Mayo (Primal Kitchen)
- 1 tbsp strained freshly squeezed lemon juice
- ½ teaspoon Dijon mustard
- Salt to taste
- Freshly ground black pepper
+ 2 slices of sourdough bread cut in halves
INSTRUCTIONS
- In a mixing bowl, combine chicken, celery, scallions/onions, and herbs
- In a separate bowl, whisk together mayonnaise, lemon juice, mustard, salt
- and pepper to taste
- Add both mixtures to the poached chicken and mix until combined. Refrigerate until ready to serve.
To poach the chicken:
Pick pot in which the chicken breasts can be completely submerged in water. Fill up the pot half way up with cold water and bring to boil. Don’t add any salt or seasoning, just plain water. Once you see the water boiling, add the whole chicken breasts and make sure they are completely under water or you’ll have to flip them after 5 minutes which is an unnecessary extra step you don’t need to take if you have enough water and big enough pot.
Cook the chicken breasts in boiling water for 7 minutes, then turn the heat off and keeping the pot covered, leave the chicken in the hot water for another 8 minutes. Even tho the water is not boiling, the chicken continues to cook. Take the chicken out on a plate and cover with aluminum foil and let it cool down. Do not cut into the chicken until it cools down because the chicken is actually still cooking inside. This technique will ensure that your chicken is fully cooked through without losing any moisture keeping itself juicy and delicious.

Tracy, I am sure that it is acceptable for keto if you ditch the bread! I would eat it on a plate of leaves such as lettuce and/or spinach…
