Low Carb Breakfast Crepes with Mixed Berry Jam (FM)

*Yields two portions
Ingredients for the crepes
2 tbsp – coconut flour
4 large – eggs
1 tbsp – coconut oil
1/2 cup – water
3 tbsp – Swerve
+2 tbsp – coconut oil for cooking
Ingredients for the Mixed Berry Jam
2 cups – frozen or fresh mixed berries
1/3 cup – coconut cream (chill a can of coconut milk in the fridge and then use the thick part of the milk)
3 tbsp – Swerve
1/4 tsp – xanthan gum
Instructions:
- Start with the berry jelly. Add the berries in a small sauce pan with coconut milk and bring to boil. Add the Swerve and xanthan gum and mix well. Turn down the heat and stir for about 2 minutes. Set aside and let it cool down while you prepare the crepes
- Add the coconut flour and eggs into the food processor and mix. Then add the tablespoon of coconut oil and water and blend well.
- Heat up 1 tbsp of coconut oil in a pan over low/medium heat and add half of the batter. Spread the batter to the edges of the pan.
- Cook until the top of the crepe is firm and small bubbles are forming. Then flip over and cook the other side. It should take about 4-5 minutes total.
- Repeat with the remaining batter.
- Place the crepes on plates and top with the Berry Jelly. Roll up, add some whipped cream on top and enjoy!

supper yummy! I added a bit of flax meal to batter…then sprinkled chia seeds on top of crepe and berries once it was cooked for added protein & nutrition. Very satisfying!
My husband and boys liked it too!

These look amazing! I usually make my hubby his fav French toast on Sundays and I always feel deprived with just my 2 plain eggs…I think I have finally found something that will make me feel like I’m getting a Sunday morning treat without blowing my diet. Going to try these tomorrow morning! 😀

My husband and I just made it and what we did was make them like really thin little crepes. We made 4 out of them instead of one large one. One, it makes it more crepe like and 2, you really don’t have to flip, just mostly cook it through because it’s so thin. Hope that helps.
