Apple Avocado and Arugula Salad (FM)

*Makes 1 Portion
Ingredients:
1 large salad bowl of fresh arugula
1 sweet apple chopped
1 avocado chopped
2 scallions chopped
1/2 cup fresh portobello mushrooms chopped
1/4 cup crumbled feta cheese
1 handful walnut pieces
2 tbsp olive oil
2 tbsp champagne vinegar
1 tbsp Choc Zero Maple Syrup (or agave)
2 tsp freshly squeezed lemon juice
Salt & pepper to taste
Instructions:
- Fill a large salad bowl with arugula and mix in well the olive oil, vinegar, lemon juice, and agave. You can use your hands to rub it all in so that all leaves are evenly covered.
- Add all of the other chopped ingredients and toss well. Your meal is done, enjoy!!
