Arugula Grape Salad (FM/WEM)

* this recipe is well balanced and full of healthy fiber and fat, however it does contain grapes and maple syrup so for those of you who are really carb sensitive, it can be considered a WEM.
*yields one portion
Ingredients for salad:
3 cups fresh arugula
1 cup grapes, halved
2 tbsp sliced almonds
1 tsp fresh thyme, chopped
1/2 avocado
salt & pepper to taste
Dressing:
1 tsp maple syrup or Choc Zero Maple Syrup
1 tbsp red wine vinegar
1/4 tsp mustard
1 tsp avocado oil
Instructions:
1. Combine the ingredients for dressing in a bowl and whisk.
2. Combine ingredients for the salad in a large bowl, eason with salt & pepper to taste and drizzle with the dressing. Toss gently to coat.

I would’ve never thought to add fresh thyme, and it was such a nice touch. I’m normally not a fan of arugula as a base for salad, but the sweetness of the dressing evens out the bitterness of the greens. Great salad!
