Broiled Steak with Chimichurri Sauce (FM)

Ingredients:
4 oz flank steak
garlic powder
1/2 cup fresh cilantro
1/3 cup fresh parsley
1 tablespoons dried oregano
1 garlic clove, minced
3 tablespoons red wine vinegar
1/3 cup extra virgin olive oil
crushed red pepper
salt & pepper
Instructions:
- Add the steak to a large broiling pan or baking sheet dish and season it with the salt, pepper and garlic powder.
- Move your oven rack up as close as possible to the broiler and preheat the oven with the broiler for a few minutes.
- In a food procressor add the parsley, oregano, cilantro and garlic and pulse a few times so it’s chopped and mixed together but still slightly chunky. Then add vinegar and pulse a few more times just to mix it well. Drizzle on the olive oil and pulse until mixed together. Put into a bowl and stir in the salt, pepper and a sprinkle of crushed red pepper flakes to taste. If you like spicy add a little more pepper flakes.
- Place the steak on a broiler pan or baking sheet and broil about 3-5 minutes on each side. 3 minutes will be more medium rare while 5-minute will be more medium well.
- Remove the steak and let rest for about 10 minutes before slicing it thinly against the grain.
- Enjoy your personal serving of steak topped with about 2 – 2 1/2 tablespoons of chimichurri sauce per serving!
*the leftover sauce can be stored in the fridge and enjoyed for up to a week.
