Buckwheat Cinnamon Pudding (FM)

*Makes 1 Portion

Ingredients
3/4 cup soaked buckwheat (soak 1/2 cup buckwheat groats in 1 cup filtered water for at least 5 hours)
2-3 tbsp Swerve sweetener
1 cup coconut cream
1/4 tsp cinnamon

Instructions

  1. Combine the soaked buckwheat, Swerve and cinnamon with coconut cream in a small pot and bring to a boil.
  2. Keep the heat on low and simmer stirring frequently for about 15-20 minutes until the mixture becomes thick and creamy.
  3. Let it cool down for about 5-10 minutes and serve. Just like rice pudding, this dessert is delicious warm or cold.

Tip: if you want a low calorie version of this dessert, use unsweetened Almond milk instead. The coconut cream is quite dense in energy.

    This is realy FM? Is buckweat not high in carbs? Is it possible to eat this Dessert, after a meal? it looks like realy delicious 🙂

    what can be used to substitute coconut cream? this dessert looks SOOOOO tasty and the cream is the only ingredient I don’t have !!!

      You can use any milk as a substitute and Zuzka is already sharing one in the tip:

      dear Cinthia,
      I just made this too, and it is truly awesome. Can’t believe it’s gluten free, too !!! I used half a cup of coconut milk and half a cup water to make it a little less calorie-dense. LOVED IT !! thank you Zuzka !!! xoxox
