Cashew Walnut Stuffed Dates (WEM)

Ingredients:
15 dates,pitted
1/2 cup walnuts
1/2 cup cashews
bunch of mint
1 tbsp maple syrup
1/2 tbsp extra virgin olive oil
1/4 tsp sea salt
Zest of 1 lemon
1 tbsp fresh lemon juice
20 walnut halves for garnish
Instructions:
- Soak the 1/2 cup of walnuts and cashews for 30 minutes.
- In a blender add the soaked nuts, maple syrup, olive oil, salt, lemon zest, and lemon juice and blend until smooth.
- Slice each date into thirds and top each one of them with about a 1/2 tbsp of the nut mixture, mint leaf and a piece of walnut.
- Serve or store in the refrigerator up to two days.

Dates and maple syrup are high in carbs.. Not doing so much “carb control” eating anymore? Just wondering..
I’m very petite (5’6, 110lbs) and trying to find out which way to eat would be best for me.. as I’m trying to put some muscles on my bones.. Low carb high fat? Or low carb more protein? Or are carbs good for my needs…? I’m confunsed….
I’m in 9th week of the Cardio and Strength Starter Program.. Before that I completed the Bunny Slope Beginner Program. I feel stronger, but I still can’t see any real muscle definiton..

I made these and they were sooooooooooo good! I had to share them with friends otherwise I would have eaten ALL 15 at once! Zuzana1982 not good at portion control either haha!!!! Great recipe Zuzka thank you for sharing! This would be a great app to take to a get together at friend’s house. Everyone I shared them with also LOVED them!
