Cheesy Cauliflower "Bread" (FM)

If it’s not obvious already, I’ve really been craving pizza-style flavors lately AND I’ve been using riced cauliflower a lot too (more links to those recipes at the bottom of this post).  This one includes my two recent favorites 🙂
*Makes 2 Portions
Ingredients:
“Bread” Dough:
2 cups riced cauliflower
2 eggs
1 cup shredded mozzarella
1 tablespoon dried oregano
1 tablespoon dried parsley
1 teaspoon garlic salt
Marinara Dipping Sauce (I make my own whenever possible because I think it’s easy and healthier than other jarred options):
2 medium sized tomatos, chopped (try to retain as much juice as possible)
3 garlic cloves, minced
1 teaspoon dried parsley
1 teaspoon dried oregano
1/2 teaspoon chili flakes (I actually used 1 whole teaspoon because I wanted it extra spicy)
salt & pepper to taste
Instructions:
- preheat oven to 425 degree F and line a baking sheet with parchment paper.
- add the riced cauliflower (just put cauliflower florets into a vitamix or food processor until it’s finely chopped), the eggs, oregano, parsley and salt into a large mixing bowl and mix well.
- portion into 2 balls and form into flat ovals on the parchment paper-lined baking sheet. Â Let bake for 25-30 minutes until browned throughout.
- make the dipping sauce on the oven over medium-high heat. Â drizzle on olive oil and sprinkle in the minced garlic, let cook 2-3 minutes until fragrant and slightly browned. Â add the chopped tomatoes and season with parsley, oregano, chili flakes and salt/pepper. Stirring frequently and smashing the tomatoes along the way. Â Bring to a boil and then let simmer on low about 10 minutes.
- once the cauliflower is done, sprinkle on the additional 1/2 cup mozzarella and let bake until cheese is completely melted.
- let cool 5-10 minutes and cut into strips and enjoy dipping in the marinara sauce

Does the first 1/2 cup of mozarella get mixed into with the cauliflower mixture? Maybe I overlooked it. Thanks!

I was wondering the same thing, unfortunately I had already put it in the oven before I realized that half of the cheese was unaccounted for in the instructions.

I am wondering, if we have any chance to safe these receipes and mark it also as our favorite, as we are able to do with our favorite workouts by clicking the “Mark as favorite- button”.
Otherwise, what about the idea to set up a “safe in my cookbook- button” or so, to have my own favorite receipes safed as I am able to safe my favorite workouts and make it visible on my account.
Just a thought of mine! What about you guys? Would you be interested in that as well?
It´s such a pity to miss favorite receipes and to be not able to find them any time after, the receipes are to delicious to be missed!

I love the idea of having pizza that is so much healthier and way less carbs! It’s a win win.

I made this one and it was awesome! 🙂 Way more crisp than I was expecting….and my cauliflower was getting soft – so if you have a getting-on cauliflower, try this! I think adding some breadcrumbs or panko would take this to an insane level for those that are less carb-adverse. Gonna try that next time. (I’m not as strict or anywhere near as lean as Z…not my goals, but I do try to stay healthy with lots of veggies, healthy fats, mostly plant-based but somet meat protein, and whole grains)

I made this today. It was SO, SO, SO GOOD. Cauliflower is one of my favorite vegetables, probably my favorite in the Brassica family, for sure, maybe tied with brussels sprouts….
I made it with a mix of Ricotta and Ricotta salata, mainly because I am very sensitive to casein, and these cheeses are created after the casein is removed (made up of the milk fats and whey).
I also added more generous amounts of parsely and italian seasoning.
I ate mine with pesto, salmon, and tamari-sauteed shitake mushrooms on top. OHHH man, it was a great dinner.
