Chicken Avocado Burgers (FM)

*this recipe makes 4 burgers

Ingredients:
1 pound ground chicken
1/2 jalapeno, remove seeds and chop small
1 garlic clove, minced
1 cup finely chopped cauliflower (I used a food processor)
1 tablespoon onion powder
salt & pepper to taste
1/2 avocado, chopped
2 tablespoon algae oil (or olive oil)
head of iceburg lettuce
1 tomato, cut into 4 thick slices
4 tablespoons dijon mustard
4 tablespoons feta cheese

 

Instructions:

  1. in a large mixing bowl combine the ground turkey, garlic, jalapeno, cauliflower and salt & pepper, using your hands to mix well then add in the avocado chunks and gently fold into the mix. Split into 4 portions and mold each into a burger shape.
  2. in a large sauce pan over medium heat add 2 tablespoons oil, when it’s hot add the burger patties and cover with a lid, let cook approx. 5 minutes each side (until browned) keeping covered the whole time. Turn off the heat and let rest until you’re ready to plate.
  3. Cut 4 slices of iceburg lettuce and spread on dijon mustard.  Top with burger patty, tomato slice and sprinkle on feta cheese.
