Chicken Breast with Brie Cheese, Strawberries, Tomato & Herbs (FM)

Ingredients:
6 chicken tenders (or slice 2 large chicken breasts into 3 thinner slices)
6 slices brie cheese
1 tomato sliced
1 cup sliced strawberries
3 tbsp extra virgin olive oil
2 tbsp freshly squeezed lime juice
2 tsp honey
1 serrano chile, seeds removed, minced
Freshly ground black pepper & salt
3 tbsp fresh mint chopped
3 tbsp fresh cilantro chopped
1 tbsp oil for sautéing (I use algae, avocado or coconut oil)
Instructions:
- In a large skillet heat up the tablespoon of cooking oil over medium/high. Season the chicken tenders with salt & pepper and sauté for about 4-5 minutes on one side until the bottom is golden brown, then flip and sauté for another 2-3 minutes. Place the slices of Brie cheese on top of each chicken tender, cover with lid and cook for another 2 -3 minutes until the cheese melts lightly on top. Place the chicken tenders with melted cheese on plates.
- To make the dressing, which together the olive oil, lime juice, honey, and serrano. Toss the sliced strawberries and tomato with the dressing.
- Cover the top of each chicken evenly with the dressing, strawberries and tomato. Serve immediately.

The instructions doesn’t say what to do with the chopped cilantro and mint.
