Chicken Cauliflower and Artichoke Casserole (FM)

*Makes 2 large portions
Ingredients
2 chicken breasts
1 bunch fresh thyme sprigs
1 head cauliflower cut into florets
1 shallot finely chopped
3 tbsp olive oil
zest of 1 lemon
1/4 cup fresh lemon juice
5 cloves garlic thinly sliced
1 (14 oz) can of artichoke hearts drained
Salt & Pepper about 1/4 tsp each
Instructions
- Spread thyme sprigs evenly in the bottom of a 7×11 inch baking dish
- Place chicken over thyme sprigs and spread cauliflower around chicken.
- Combine the shallot, olive oil, lemon zest, lemon juice, salt & pepper, and artichokes and garlic in a bowl.
- Pour the mixture over the chicken and cauliflower, cover and refrigerate for an hour.
- Bake at 400F degrees for 45-55 minutes until the chicken is completely cooked through.

Hi Zuzka, I don’t eat meat. Can you advise me with what I could replace it with? I usually eat legumineuse, tofu, quinoa,, wild rice, what are your thoughts on that?

Oh and my body type is ECTOMORPHS.
I have a very healthy diet but I wonder if I might be eating too many carbs, oh and I also train everyday. I follow your weekly schedule, no extra workout yet.
