Cleansing Vegetable Broth

*yields 8 cups
Ingredients:
1 large yellow onion, chopped
1 head celery root, cleaned & chopped
2 parsley roots, cleaned & chopped
6 carrots, chopped
4 cloves garlic, chopped
4 cups spinach
1 /3 cup fresh parsley
2 tbsp Maca powder (optional, if you want to add calcium, and essential amino acids)
1/2 tsp salt
1/4 tsp freshly ground black pepper
12 cups water
Instructions:
- Add all the ingredients except fresh parsley, and Maca powder into a large pot and bring to boil. Reduce the heat to low and simmer for 20 minutes.
- Add the fresh parsley and simmer for another 5 minutes.
- Strain the broth and discard vegetables (unless you want to eat them). Add Maca powder and stir well. Keep in closed jar in the refrigerator for up to one week.
What to do with the boiled vegetables?
I personally don’t like to waste food, so when I make this vegetable broth, I save the cooked veggies for this simple dish:
Add the cooked veggies into a salad bowl, toss with salt & pepper and tablespoon of extra virgin olive oil. Top with roasted pumpkin seeds. Enjoy!

sorry to sound dumb but what are “parsley roots”? Is it just stems of parsley?

nope, it’s the actual root. they look very much like parsnip.

Where I live, it is super common (in Romania). Google it to see how it looks, or ask at the store. I’m sure you’ll find it 🙂

I will be making this! I love sipping broth. have everything but Maca powder. I have my parsley stalks in the freezer. I can’t remember if I have the roots attached. I wonder if turmeric and some ginger would compliment this.

I think so! I just made something similar and added Ginger and Garlic. It was really good!
