Exotic Spicy and Sweet Soup with Caramelized Onion (WEM)

I keep my recipes simple, because I am a home cook, and I do not have any special cooking techniques. My recipe videos are for everyone who likes a simple, step by step guide and easy to prepare healthy meals that will knock your socks off.

Ingredients:

  • 1 large sweet potato
  • 1/2 can of chickpeas (garbanzo beans)
  • 1 tbsp freshly grated ginger
  • 1 tbsp coconut oil
  • 2 tbsp unsweetened flaked coconut
  • 2 tbsp fresh lemon juice
  • 1 cup coconut milk
  • 1 cup whole milk
  • 1 large onion
  • 2 1/2 tsp of Z-Spice Mix
  • Salt to taste
  • 1/4 cup chopped cilantro for garnish

Z-Spice Mix:

  • 1 tbsp ground cumin
  • 1 1/2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp ground cinnamon
  • 1/2 tsp all spice
  • 1/2 tsp ground nutmeg
  • 1 1/2 tsp ground pepper
  • 1/4 tsp cayenne

Mix all spices together to create an awesome spice mix that you can use in other recipes for an exotic twist.

Recipe

Step #1:

In a large sauce pan combine coconut milk, whole milk, spice mix, chopped sweet potato and bring to boil. Add freshly grated ginger, turn the heat down and cover. Cook until the potato is soft.

Step #2:

While potatoes are cooking, heat the coconut oil in a medium size skillet and sauté coarsely chopped onion on medium-high until it starts to turn brown. Reduce the heat to medium and move the onion around in the sauce pan occasionally and let it cook for about 8 more minutes to caramelize it. Stir in the coconut flakes and cook for another minute. Remove from heat.

Step #3:

Once the potato is soft, let it cool down for couple minutes and mix in half the amount of chickpeas and lemon juice. Transfer into a blender and blend until smooth. Transfer into a bigger bowl, stir in the rest of the chickpeas and half the amount of caramelized onion with flaked coconut. Salt to taste. Keep the rest of the onions for garnish.

Step #4:

Transfer the soup into two medium size bowls and garnish with the fresh cilantro and the rest of the caramelized onions with coconut flakes.

    My husband and I are eating it right now. Very tasty. I love the cilantro and onions. We added chicken. Reminds me a lot of your carrot and ginger sauce with chicken. Thank you very much!
