Garlic Lemon Brussels with Salmon (FM)

Garlic_lemon_brussels_with_Salmon

*this recipe makes 2 servings (or a good lunch with leftovers for dinner) and it only takes 15 minutes with very little dishes to do after 😉

Ingredients:
1/2 lb salmon filet
10 brussel sprouts, peel off the outer leaf and cut in half
1 lemon
3 garlic cloves, minced
2 tablespoons fresh parsley, chopped
2 tablespoon olive oil
1 tablespoon dijon mustard
salt & pepper to taste
2 tablespoon grated parmesan

Instructions:

  1. preheat oven to 450 degree F and line a baking sheet with foil.
  2. in a large bowl toss together the brussels sprouts, half of the minced garlic, juice from half the lemon and 1 tablespoon of olive oil, toss to coat evenly, then place face down on the baking sheet.
  3. making the sauce for the salmon… in a small bowl mix together the chopped parsley, the remaining garlic, dijon mustard, juice from the other half of the lemon and the last of the olive oil
  4. place the salmon skin side down on the baking sheet next to the brussels and layer the sauce on top.
  5. put the baking dish in the oven for 13-16 minutes until the brussels are browned and can easily be pierced with a fork. You can fold the foil over the salmon and let rest for 5 minutes before serving.
  6. sprinkle on a little parmesan cheese to the brussels and enjoy alongside the salmon.
