Italian Meatballs (FM)

I needed to use the leftovers of the amazing tomato sauce I used in my home made Buffalo Pizza the other day, so I did another great Italian dish that you can enjoy for dinner even without doing a workout prior to that. It just protein and fat, no carbs! Instead of pasta I decided to use Brussels Sprouts as a side dish so my plate was just full of balls and delicious Italian sauce.

*Makes 10 Portions (1 Portion = 3 Meatballs)

Ingredients:
1 lb ground beef
1 cup shredder parmesan cheese
2 cloves minced garlic
1 large egg
1 cup whole milk ricotta cheese
1/2 cup finely chopped shallots
1 tbs grapeseed oil
2 tsp italian seasoning
1 1/2 tsp sea salt
1/2 tsp freshly ground black pepper

Instructions:

1. Preheat oven for 350°F.  In a medium size pan, heat up the oil on a medium and sauté the onions until they become translucent. Then remove from the heat and let them cool down.

2. In the meantime, whisk the egg, the ricotta cheese, the spices, salt & pepper, and shredded parmesan, using a hand held mixer (I told you the last time, that I can’t live without the hand held mixer)

3. In a large ball mix the ground beef with the egg/cheese mixture until well combined.

4. Grease a large baking sheet and start rolling 1 ounce big meat balls and placing them on the sheet. You should end up with about 30 of those. Then place the sheet in the oven and bake the  meat balls for about 20 minutes. 

The brussels sprouts, broccoli or cauliflower work great with these meat balls.

    They are really good! My partner loves them as well. Says they are the best meatballs I’ve made! And if you don’t have a handheld mixer just use a whisk 😛 turned out great 🙂

    I made these tonight with somr adjustments. I did not feel like slicing onions (lol) so I mixed the egg and spices. Rolled turkey meat to balls then rolled them in the egg mix. Sprinkled with a tiny bit of bread crumbs. For my “pasta” I put cauliflower in a food processor. Cooked with a bit of butter, spinach and then marinara sauce. 🙂 just like spaghetti and meatballs without the starch and guilt. 😉

    Does anyone know if these would be safe to freeze for later use? I don’t think I could eat thirty of these and I cook for myself, so I would love if I could freeze them! Thanks.

      I don’t see why you couldn’t freeze – or refrigerate – them for later. I am trying this recipe (finally!) for the first time tonight and there’s no way I’m eating them all myself, so the leftovers will be going in my fridge.
