Lemon and Artichoke Chicken Thigh Dinner (FM)

Ingredients:
4 bone-in, skin-on chicken thighs
2 tablespoon olive oil
1/4 red onion, sliced
1 tablespoon capers, rinsed and drained
3/4 cup chicken stock
1 lemon
14 oz can artichoke hearts (drain and chop them)
2 1/2 cups roughly chopped spinach
1 cup cherry tomatoes, halved
salt & pepper to taste
Instructions:
- preheat oven to 425, paper towel dry the chicken thighs and season with salt and pepper.
- in a large, oven-safe saute pan add olive oil over medium-high heat. After the oil is hot, add the chicken thighs skin side down and don’t touch for 5-6 minutes until skin is crispy.
- flip the chicken thighs and move over to one side of the pan and add the onions, stirring often until soft.
- add the capers, chicken stock and half the lemon (sliced into quarters) let simmer over medium heat to reduce for 5 minutes. Flip the chicken breast so the skin side up again and put the pan in the oven for 20 minutes.
- remove from oven and put on the stove top, using a tong take the chicken thighs out and plate them then cover with foil and set aside.
- being careful because the pan handle is still hot, set the oven to medium heat and add the artichoke and spinach, stir often until the spinach is wilted about 5 minutes then add the tomatoes, the juice from the remaining half of the lemon and season with salt and pepper.
- cook until warm throughout then portion out on to plates and top with chicken thighs.

I’m making this today. Super delish. I had clotted cream, strawberries and grain free Elizabeth granola for breakfast (warmed). It was so good it should be illegal.
