Lemon Pepper Artichoke w/ Avocado Mayo Dip (FM)

Here is another recipe using Avocado Mayo. I got it online from Thrive Market. I’m a big fan of this store and have been personally been a member now for almost a year. It’s a great grocery delivery service that offers huge discounts and a big selection of healthy products. They’re currently offering a free jar of Avocado Mayo for new people who sign up (or free jar for current members with a $50 minimum purchase). I ordered a jar and have been experimenting with some recipes. This artichoke dip is really good!
Ingredients:
1 artichoke
olive oil
lemon pepper seasoning
2 tablespoon avocado mayo
1/2 lemon, juiced
salt & pepper
Instructions:
- Put a medium sized pot of water on the oven to boil. Turn your oven onto broil and move the top rack up as high as it goes.
- Prepare the artichoke by cutting off the spiking ends of the leaves and cutting down the middle.
- Once the water comes to a boil, add the artichoke and let steam for 7-10 minutes (depending on the size of your artichoke). Test to see if they’re cooked by trying to pull off a leaf, it it comes off easily it’s done, if not let cook for a couple more minutes.
- Remove the artichokes and set on a paper towel to let the excess water drip off. Using a spoon, scoop out the middle of the artichoke and remove the little hairs attached to the heart.
- Lay the artichoke halves on a baking sheet lined with foil so the middle is face up. Drizzle on some olive oil and sprinkle on the lemon pepper seasoning (make sure to sprinkle some in between the leaves).
- Put in the oven under the broiler for 3-5 minutes until browned on top.
- In a small dish combine the avocado mayo and lemon, season with salt and pepper and whisk together.
- Enjoy dipping the artichoke leaves in the avocado lemon sauce 🙂

I love artichokes but I always use the canned ones because I tried to prepare them fresh one time and it was an epic fail. I think I’ll try again from fresh. Your instructions sound simple. I make my own mayo so I’ll add lemon seasoning and give it a try. Sounds delicious. 🙂
