Low Carb Beef & Pineapple Tacos (FM)

*yields 1 portion

Ingredients:
2/3 cup shredded whole milk mozzarella cheese
1/4 cup fresh chopped pineapple
1/4 cup pan seared skirt steak chopped into small bites (optional – you can also use grilled chicken or make this recipe meatless)
1/4 seeded and finely chopped jalapeno pepper
1/2 tbsp fresh chopped cilantro
1/2 tbsp fresh chopped parsley
Salt & Pepper
lime wedges

Instructions:

  1. Add the 2/3 cup of shredded whole milk mozzarella cheese into the middle of large skillet and turn the heat up to medium. Spread the cheese in the pan into the shape and size of a tortilla and let it melt until it’s smooth on top and brown on the bottom. It takes only a couple minutes.
  2. Take a spatula and carefully unstick the cheese from the bottom. It should be fairly easy.
  3. Grip one side of the mozzarella tortilla with tongs and place it on top of a thick wooden spoon placed over a large bowl and let it harden. There’s your taco shell.
  4. In a small bowl mix the pan seared skirt steak with pineapple, jalapeño, fresh herbs and season with salt and pepper. Place the cheese taco shell on a plate and fill it with all the mixed ingredients. You can drizzle with fresh lime juice. Serve right away while still warm. It tastes like Hawaiian pizza.

    Hi all,

    I tried this recipe yesterday (with part low skin cheese since it’s all I had), but had a really hard time with the shell sticking to the pan. Any advice? Did anyone replace the cheese with a different ingredient either? Always curious what people come up with, haha. Thanks bunches 🙂

    omgoolly I am so excited for supper tonite . I will do this with the leftover chicken legs. gross!
    My husband wanted them, oh wait , I have thawed chicken breast in the fridge! Sweet chicken tacos😍😘 yeay ,, its on. I also have some spinach and no lettuce , so I will make it with that as the veggie. I will let you know if I do other subs as I will.
