Low Carb Macadamia Cookies (FM)

*Yields about 20 cookies
Ingredients
1 cup macadamia butter *
1/2 cup almond flour
2 eggs
1 1/2 tsp vanilla flavoured stevia
6 tbsp powdered Swerve (erythritol)**
1 tsp ground cinnamon

*It takes about 2 cups of macadamia nuts to get 1 cup of macadamia butter. You can do it at home in your food processor. Just blend the crap out of the nuts until you get a smooth butter.
**Sometimes I can’t find the powdered Swerve in the store so I just use the granular. You can also try to powder it in a blender. I tried it, but I didn’t like the sweet cloud that came out of the blender.
Instructions:
- Preheat oven to 320 F degrees.
- Mix all the ingredients in a bowl until well combined and smooth.
- Spoon the batter onto a parchment paper lined cookie tray one tablespoon at a time. They can be pretty close together. You can press down on them with a fork.
- Bake them in the preheated oven for about 16-18 minutes or until golden brown with the edges starting to harden. Let them cool down completely. The cookies will be doughy on the inside.

I’ll have to try with cashew butter. It is a sweet taste so I can lower the amount of sugar. I don’t digest well the sugar alcohols, so need to go for regular sugar.

Just made these with cashew butter. They turned out good, I used a bit more cinnamon since I love the taste!
