Mascarpone Berry Parfait (FM)

Ingredients:
2 oz mascarpone cheese
1/4 cup whipping cream
1/4 tsp vanilla extract
1 tbsp sugar substitute (I use Swerve)
1/2 cup fresh raspberries
1/2 cup fresh blueberries
Instructions:
- Whip together mascarpone, cream and sweetener in a bowl with an electric mixer until you form stiff peaks.
- Distribute the layers of raspberries, cream and blueberries evenly into 3 glasses.

Carbs: 7.1 g
Net Carbs: 5.1 g
Fat: 11.8 g
Protein: 1.2 g

does this mean you don’t count the carbs in fruit? since It is a fm or do you only count certain low carb fruits as fm?

I often see (everywhere) that berries don’t “count” as carb as they are very low in sugar and glycemic index, high in fiber (which slows down the sugar intake), etc…
A high carb fruit is rather banana, mango, dates, dried fruits (concentrated in sugar).

Hi Erin. I just found this recipe and your right, it will be awesome for 4th of July coming up in 3 days. My husband’s going to love it! I think, because it’s so hot here in south Texas, I will use frozen berries. Happy 4th of July weekend Warriorz! 🙂

Just tried this tonight. I never had marscapone before but I always wanted to try it. This dish is so delicious and sinful. The perfect snack for cravings! Taking some to work tomorrow, since there’s 3 servings and my fiance won’t eat it.
