Keto Berry Breakfast Muffins (FM)

*This recipe makes 9 muffins – they’re great to keep in fridge and taste great cold or quickly warmed in the microwave for a busy morning! They’re about 190 calories each so keep that in mind when determining your own portion size based on your personal fitness goals.
Ingredients:
1/2 cup vanilla Greek yogurt
2 tablespoon softened butter
1 teaspoon vanilla extract
1/4 teaspoon apple cider vinegar
1 3/4 cup almond flour
3 tablespoons Monk Fruit or Swerve (erythritol) sweetener
1/2 baking soda
1/4 teaspoon salt
3 eggs
1/3 cup fresh raspberries
1/3 cup fresh blueberries
Instructions:
- preheat oven to 350 degree F and fill 9 muffin pan with paper liners or I used re-usable silicon muffin liners.
- in a medium bowl mix the dry ingredients together the almond flour, sweetener, baking soda and salt.
- you’ll need a medium sized bowl with an electric hand mixer OR I just used my vitamix – add the greek yogurt, butter, vanilla extract and apple cider vinegar then pour in the ingredients from the dry mix.
- mix on low for about 5 minutes then add the eggs and blend on low again until mixed thoroughly.
- add all but a small handful of the berries into the mix and mix with a spoon (don’t blend) and evenly distribute the batter amongst all 9 muffin cups
- bake for about 20 minutes (until toothpick can be inserted and cleanly comes back out) – let cool and enjoy!

Hi Zuzka, I see that you are using erithrytol for some of these recipes. I was wondering if I could use xylitol in place of it, and if so, are the measurements would be the same?

You can but I don’t use Xylitol because it causes stomach irritation. Erythritol doesn’t have any side effects.

Finally got to make this ! Awesome! Will go into my list of portable snacks/meals for during the week. I used frozen berries as that was all I had on hand. Worked ok. These aren’t very sweet but the texture is nice. Great with my coffee after work out this morning. I wonder if you could add some unflavored protein powder and if sour cream could be used instead of yogurt to cut down the sugar. If anyone tries either, please let me know!

I added some extra vanilla extract to make up for the vanilla in the yogurt. Eliminates a lot of sugar!! I may have to make these tomorrow for breakfast!!

Funny you said that because I added more vanilla too. I really wanted these tonight but I didn’t have yogurt or sour cream so I used cottage cheese and they actually turned out really good!

Omg! Just made a batch. I put 4 in muffin tins and the rest in waffle iron. Best waffle I have ever had !! I added few drops of pure maple syrup on top, so not a FM but so good!!!!

Oops, it was 5 in the muffin tins, just to give you the ratio if you want to try a waffle! Mine was oozing out of the iron a bit. Still used sour cream, extra vanilla (1 T total) and frozen raspberries. Didn’t thaw them first.

Yum! I made these for dessert tonight using just raspberries with lemon Greek yogurt, and adding lemon zest, a little less than a tablespoon of Demerara sugar, and a little almond extract– delicious!
I think it would also be good with lemon and blueberries and possibly a coffee cake type topping too. 😉

Sure! Fair warning, they are addictive!
3 cups mashed sweet potato
1/2 cup coconut flour
2 tsp baking soda
4 eggs
1/2 cup melted coconut oil
4 T raw honey
2 tsp cinnamon
1 tsp all spice
Mix wet ingredients (I use kitchenaide mixer) Mix dry ingredients in separate bowl. Add dry to wet and mix well. Spoon into 12 lined muffin cups. Bake for 20 min at 350. Store in air tight container in fridge. I freeze half for the following week. These are definitely a WEM:) let me know what you think! I tweaked several recipes to come up with this one.

I roast the sweet potatoes in the oven about an hour at 400. I peel and mash them as soon as they are cool enough (though they are still quite warm). I usually use about 3.

Hi, Cari! Did you get to try the sweet potato muffins yet? Also wanted to let you know for the pancake berry muffins I used kefir yogurt (homemade) and it was great! I also added a scoop of unflavored protein powder so I have probiotic protein muffins !!
