Protein Pancakes filled with Hazelnut Chocolate Spread (FM)

*This recipe combines 2 of my all time favorite recipes to make this deliciously sweet breakfast (or dessert) This could easily turn into a calorie dense recipe however, so keep your fitness goals in mind and be careful of how often you enjoy this meal.
Low Carb Protein Pancakes:
2 eggs
2 oz cream cheese
2/3 cups almond flour
1 scoop of vanilla protein powder
2 teaspoons erythritol
pinch of salt
Sugar-free Hazelnut Chocolate:
1 cup macadamia nuts
1 1/2 cups hazelnuts
3 tablespoon unsweetened cocoa
1 scoop vanilla protein powder (or erythritol)
(optional coconut oil)
Instructions:
- Take all the ingredient in the chocolate spread and blend together well (I used my vitamix – you can see the process by watching the video).
- Spread about 1 1/2-2 tablespoons of the chocolate spread onto a piece of parchment sheet (per pancake) and put in the freezer for at least 15 minutes. Take the remaining chocolate spread and store in the fridge.
- Rinse/ wash the blender then add all the pancake ingredients and blend until smooth.
- In a frying pan over medium heat, add 1/2 tablespoon of butter (or olive oil if you prefer) and let heat until completely melted and bubbling.
- Pour 1/4 of the pancake batter into the pan, let cook about 2 minutes (until starts to bubble) then peel off the chocolate disk from the freezer and place in the center. Pour over another 1/4 portion of the pancake batter to cover the chocolate.
- Using a spatula to test that the batter is cooked on the bottom (should be browned around the edge) and becomes easy to flip. Let the top side cook until browned then plate and enjoy!

Are you all here on the keto diet eating that high in fat meals like this one? I’m just wondering.. if that and similar recipes are good for me, if I’m not on keto and never have been…?

It’s still good for you as long as your carbs remain low. If you eat high carb high fat – not healthy. High carb low fat – not healthy. So just stick to low carbs and make sure your diet contains mainly protein, healthy fat and fiber.

This yielded two pancakes for me. One pancake with no topping: 375 calories, 24 fat, 10 carbs, 27 protein. I used store-bought hazelnut spread. I may try it with blended thawed raspberries with swerve and topped with coconut flakes next time. Nice and filling when paired with a protein shake. Completely satisfied my sweet tooth! Super easy to make and easy to flip! Huge hit with the entire family.
