Roasted Cauliflower and Mushrooms Salad Recipe

Nutrition is a key element when it comes to health and fitness so I spend quite a bit of time to search for recipes that are healthy and delicious at the same time. I believe that I can convince just about anyone that eating healthy does not mean sacrificing taste. I hope you will enjoy this recipe. I loved it.

1/4 head of cauliflower
1/2 onion
1 cup of mini portobello `mushrooms
about 3-4 cups of leafy greens like spinach and arugula
1 handful of cashew nuts
curry
salt
pepper
parsley
cilantro
fresh lime

This salad was good. however, I added broccoli also and it took away from the salad, Next time I will just use cauliflower.

One of my favorite recipes! Some times I will just cook up the cauliflower and mushrooms and use them as a side dish or have them with a grain to make a meal.
