Sausage Breakfast Muffins (FM)

These are great to make Sunday morning then enjoy for the rest of the week! 🙂
*this recipe makes 12 muffins (2 muffins can be a good portion size)
Ingredients:
12 eggs (1 per muffin)
1/2 pound turkey sausage
1/2 cup chopped white onion
1 cup chopped broccoli florets
1/2 red bell pepper, chopped
1/2 cup shredded cheddar cheese
salt & pepper for taste
Instructions:
- Preheat oven to 375 degree F.
- In a large sauce pan over medium-high heat, add the turkey sausage and stir occasionally until browned throughout and no pink remains. Remove from pan and let set on a paper towel lined plate.
- Wipe the pan with a paper towel and drizzle on a little olive oil. Â Add the broccoli, bell peppers and onions. Â Let cook, stirring occasionaly 4-6 minutes until the onions are translucent and the other veggies are slightly tender.
- Grease a muffin tin with olive oil and using a spoon, evenly distribute the turkey sausage amongst all 12 cups. Â (I used these cute valentines day cupcake paper liners but then had a hard time removing the paper after they cooked – I recommend just greasing the muffin tin OR using the re-usale silicone muffin liners)
- Repeat the previous step and evenly distribute the broccoli mix.
- Whisk together the eggs in a medium bowl and season with salt and pepper. Â Pour a little bit into each muffin cup (should be level just under the top).
- Take the 1/2 cup of cheese and sprinkle a little cheese on top of each muffin. Place the muffins in the oven and let bake for 35 minutes.
- You can enjoy leftovers cold OR warm them in the microwave for 25 seconds per muffin.

I’ve been making similar muffins for the past two weeks and was surprised how well they keep and heat up. I was short on time one week and just added cubed ham, cheese , and green onions. They were delicious! I use a sprayed silicone pan and had no trouble with sticking. Just make sure to spray your pan. Love your recipes 🙂

Looks delicious! Also, I think it would be a great idea to prepare a large batch and freeze them. If we can freeze quiche, I think this should work well too.
I will use my re-usable silicone muffin liners!

I am a new member and a very happy one, you are AMAZING 🙂 I would like to get your advice about the Diet, I have many food allergies like Gluten, Dairy, Soy, Peanut and Yeast, Any tip how can I replace this on your recipes? I think the Gluten may be fine with Coconut flour or Tapioca but will like your input. Thanks for sharing your great energy!
