Simple, Healthy, Breakfast Stir Fry (FM)

You don’t need to overcomplicate things, in fact the more simple you make you’re diet, the easier it is to stick to healthy options. This recipe came to mind taking what ingredients I had left in my refrigerator.
Makes 1 portion.

Ingredients:
1 cup broccoli florets, chopped
1/4 red bell pepper, chopped
1 tablespoon red onion, chopped
olive oil (or algae oil)
1 hard boiled egg
1/4 avocado, sliced
1/2 lime
salt & pepper to taste
(optional) red pepper flakes

Instructions:

  1. In a medium frying pan over medium-high heat, add the oil and let heat.  Add the broccoli, peppers and onion.  Stir frequently and let cook until slightly tender, approx. 4-6 minutes.
  2. Add the broccoli stir fry to a bowl and top with sliced boiled egg and avocado.  Season with salt & pepper and optional red pepper flakes, squeeze on some lime juice if you like as well, then enjoy!

    Hummm I would definitely eat this for lunch or dinner! For breakfast I need a bread, muffins, pancakes or tapioca…always! hahahah…:)
