Simple Two Bean Chili (WEM)

*yields 2 portions
Ingredients:
1/2 tbsp avocado oil
1/2 yellow onion, coarsely chopped
2 cloves garlic, chopped
1 red bell pepper
1 tsp chili powder
1/2 tsp cumin
1/2 can (14 oz) cannellini beans (white beans)
1/2 can (14 oz) black beans
1 can (14 oz) diced tomatoes
1/2 cup frozen corn
1/2 cup full fat coconut milk or coconut cream
1 cup hot water
1 tbsp vegetable bouillon (I use Better Than Bouillon with low sodium)
1 tbsp fresh parsley for garnish (optional)
Instructions:
1. Add the oil into a medium size pot and heat it up over medium heat. Add onions and saute for about 4-5 minutes.
2. Mix in chili powder, garlic and chopped pepper. Mix the bouillon in hot water and add it to the pot. Cook for about 5 -6 minutes until peppers are tender.
3. Add the tomatoes, beans, and corn and let it simmer for another 10 minutes. Serve and garnish with fresh parsley.

They are high in carbs also.
