Simple Two Bean Chili (WEM)

*yields 2 portions

Ingredients:
1/2 tbsp avocado oil
1/2 yellow onion, coarsely chopped
2 cloves garlic, chopped
1 red bell pepper
1 tsp chili powder
1/2 tsp cumin
1/2 can (14 oz) cannellini beans (white beans)
1/2 can (14 oz) black beans
1 can (14 oz) diced tomatoes
1/2 cup frozen corn
1/2 cup full fat coconut milk or coconut cream
1 cup hot water
1 tbsp vegetable bouillon (I use Better Than Bouillon with low sodium)
1 tbsp fresh parsley for garnish (optional)

Instructions:

1. Add the oil into a medium size pot and heat it up over medium heat. Add onions and saute for about 4-5 minutes.

2. Mix in chili powder, garlic and chopped pepper. Mix the bouillon in hot water and add it to the pot. Cook  for about 5 -6 minutes until peppers are tender.

3. Add the tomatoes, beans, and corn and let it simmer for another 10 minutes. Serve and garnish with fresh parsley.

    What is a good sub for coconut products? I have a food sensitivity that developed recently. :'(

    I’m wondering why this is a WEM?, I thought beans are high in protein.

      They are high in carbs also.

      Legumes are really hight in carbs.

    Thanks boths!, I didn´t know, will have to adjust my diet to eat them only on workout days, Thanks we learn everyday.
