Spicy Kale and Coconut Stir Fry (FM)

Ingredients:
2 tablespoon coconut oil
1 bunch of kale, remove stems and tear into small pieces
1 carrot, shredded
1 red bell pepper, cut into thin strips
1 bunch green onion, diced
2 garlic cloves, minced
1/2 cup unsweetened flakes coconut
1 cup riced cauliflower
1 teaspoon sriracha (or your favorite chili hot sauce)
1 teaspoon soy sauce (or tamari)
salt & pepper to taste
1/2 lime
Instructions:
- in a large pan over medium-high heat add 1 tablespoon coconut oil, let melt then add the garlic, bell pepper, green onion and shredded carrots. Let cook stirring frequently 2-3 minutes until fragrant and slightly tender.
- add the kale pieces, season with salt and pepper, stirring frequently, let cook until the kale is wilted and cooked throughout. Remove from heat and add to a large mixing bowl.
- in the same pan, add the remaining coconut oil and once it’s hot add the flaked coconut. stirring frequently 2-3 minutes until browned and fragrant. Add the riced cauliflower, soy sauce and sriracha, mix well and let cook until tender (approx. 3-5 minutes).
- add the coconut mix to the kale blend and toss together, portion into 2 bowls and juice the lime on top then enjoy!
