There are two variations that you can try and see which one do you prefer. The first one cold chocolate mousse and here are the ingredients:

  • 1 avocado – refrigerated
  • 1/4 cup cacao powder
  • 2 1/2 tablespoons yacon syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp finely grated orange or lemon zest
  • 1 tbsp almond milk
  • tiny pinch of sea salt

Add all ingredients into a blender and blend until very smooth. Scoop out and enjoy with fresh strawberries or other fruit of your choice.

Yacon_syrup_post

The Yacon Syrup is a vital ingredient in these two recipes. It’s the number 1 substitute for refined sugar, that as we all know, has negative effect on our digestive system and causes all kinds of bad things like the growth of unfriendly bacterias and fungus. Yikes! Sugar also spikes your blood sugar levels and makes you feel hungry sooner because it’s digested very fast. Sugar makes us fat and unhealthy people! Yacon syrup on the other hand is very rich in inulin FOS (Fructooligosaccharide) which is a prebiotic proven to help increase the overall gastrointestinal tract health, and assist in preventing candida yeast infections. Yacon syrup is so low in calories and sugar that is recommended even for people with diabetes. If you want to do something major for your health, get rid of all refined sugars and replace them with Yacon Syrup, because you can use it in any recipe that calls for sugar and make all your meals and desserts hundred times healthier just by this simple change in ingredient.

The other variation is hot home made chocolate fondue that you can pour over fresh strawberries or other pieces of fresh fruit. The difference between these two is that the hot one does not use avocado which makes total sense. Can you imagine heating up an avocado? FUJ!! (read phooey – means bad, or disgusting in Czech)

Here is how you make the hot fondue:

  • 1/2 cup almond milk
  • 3 big table spoons raw cocoa powder
  • 3 teaspoons arrowroot powder
  • 2 tablespoons yacon syrup
  • 1/4 tea spoon vanilla extract
  • tiny pinch of sea salt
  • 1/4 teaspoon orange or lemon zest (optional)

Add all ingredients into blender and blend until there are no clumps of arrowroot or cocoa powder. It should be perfectly smooth. Transfer the mixture into a small pot and heat it up over medium heat stirring until it thickens. You can always adjust the taste accordingly by adding more cocoa powder or the yacon syrup for sweeter taste. Pour the thick hot chocolate fondue over the strawberries and sprinkle with coconut flakes.

Enjoy!

I love your website and appreciate all you do!

What kind of Yacon syrup do you use and where do you find it? I am having trouble locating it these days. Thanks!
