Sweet And Spicy Chicken Pear Curry Soup (FM)

Sweet_Chicken_Pear_curry_soup

*Makes 3 Portions

Ingredients:
3 tbsp avocado oil (or algae oil, or any oil with high smoke point)
1 lb chicken breast tenders chopped
2 fresh pears unpeeled, cored, and cut into small bite pieces
1 yellow onion sliced
1 clove garlic
1 small tomato
1 1/2 cup chicken broth
1/4 tsp xanthan gum

Instructions:

  1. In a large skillet heat 2 tbsp of the oil over medium-high heat add the chicken, move it around for a minute and then cover with lid for about 7 minutes. Uncover and sautee’ until the chicken pieces start turning brown and are completely cooked through.
  2. Transfer chicken to a plate.
  3. Add the pears into the pan and sauté for about 2 minutes stirring occasionally.
  4. Add the onion and the remaining tbsp of oil and cook until soft. Stir at least here and there.
  5. Throw the tomato and garlic clove into a blender and make soup out of it (I use my Vitamix blender, which is really great. The little ninja blenders might be good too, but you need a blender that will really shred even the tomato peel)
  6. Stir in the curry powder and add the chicken broth. Sprinkle the xanthan gum over the soup and mix well. Add the chicken and turn off the heat.
  7. Let the soup cool down for a few minutes an then serve. You can season with freshly ground pepper. No need for extra salt, the chicken broth is salty enough.

    MMM, this sounds so good. I will certainly try this. By the way, I think you left out the curry powder in the ingredients list.

    I might add celery and cilantro to this….

    By the way, you could make this with Asian pear if you’re not feeling well or start to feel a sore throat. Asian pear is part of Traditional Chinese Medicine and is cooked in food for when we have a sore throat, cough, like in a cold or flu. It helps to stop cough. Also good for constipation. 🙂 This is a great recipe for cold/flu season. I would make it with bone broth, as this is extremely nutritious and healing to the gut, good for joints and ligaments/bones, etc. Very nourishing, healing, and protective for those cold winter months. 🙂

    Mmm, I just made this! It has good flavor & is something different that I wouldn’t really come up with on my own. I used veggie chick’ns and some unsalted veggie stock that I had on hand.

    Thanks for all these new recipes lately, Zuzka, it has really livened up my meals.
