Apple and Gouda Stuffed Chicken w/ Sweet Potato (WEM)

Ingredients:
2 skinless, boneless chicken breasts (tenderized and butterflied with a sharp knife)
Fuji Apple
Gouda Cheese (approx. 8 thin slices depending on the size of your chicken breasts)
Thyme
1 large sweet potato, cut into small cubes
1 teaspoon smoked paprika
salt & pepper to taste
olive oil
Instructions:
- Preheat oven to 415 degree F and line a baking dish with tin foil.
- Thinly slice your apple and layer it in the middle of the butterflied chicken breast. (I used about 3/4 of my apple and just snacked on the leftovers while the chicken baked) 🙂
- Top the apple slices with thin slices of gouda cheese and sprinkle on thyme seasoning.
- Fold over the top of the chicken and drizzle with olive oil, season with salt, pepper and additional thyme (if you desire).
- Place the chicken breast in the center of the baking dish.
- Put the sweet potato cubes into a medium sized mixing bowl and drizzle on olive oil, season with smoked paprika (the smokey taste goes well with the sweet apple stuffed chicken) and salt and pepper to taste.
- Spread the sweet potato around the chicken breasts and put in the oven for 20 minutes.
- Remove, flip/ stir the sweet potato and put back to bake for an additional 10 minutes until chicken is fully cooked (no longer pink).
