Apple "Donuts" (WEM)

Apple_Donuts

*this makes 2 servings

Ingredients:
1 apple, cored and sliced in 1/4″ slices
1/4 cup coconut flour
1/4 cup arrowroot powder
1 teaspoon ground cinnamon
3 tablespoons powdered erythritol
3 eggs, whisked
1 tablespoon erythritol, stevia, or Choc Zero Maple Syrup
1 tablespoon water
3 tablespoon olive oil

Instructions:

  1. in a small mixing bowl combine all the dry ingredients (coconut flour, arrowroot flower, cinnamon), whisk to blend well.
  2. add in the whisked eggs, water and agave and mix until it becomes a thick (but easily poured) batter
  3. in a small skillet over medium-high heat add the olive oil, once it becomes hot dip each of the apple slices into the batter and pan fry 1-2 minutes on each side until browned.  This works better if you do it in small batches
  4. portion onto a plate and enjoy!

erythritol_powder

I was so happy to discover this powdered erythritol! It’s just like a powdered sugar, which is perfect for baking, making frosting and general purposes. If you can’t find it in your local store (I bought it in Whole Foods) I’m sure you’ll be able to find it online.

    Oh my gosh this looks good! We have access to some wild apple trees down the road from us, too…I can’t wait to try it with those apples, once they’re bearing, again!!!

    I’ve been craving donuts since xmas!!! …and wanted to find a healthier version I could eat.
    I can’t wait to try these! I found the sweetener off amazon to buy and it will be a great addition to other sweeteners I use which include stevia (powder and liquid forms), just like sugar and monk fruit.

    Zuzka, I would love to be able to have the option of printing your recipes out. that way, I can keep them all in my binder!

      I’ve been either printing the web page or copying and pasting the recipes I want to save to put into my recipe binder. I love stocking up an arsenal of healthy and delicious recipes! 🙂

    That’s totally weird! I went to Whole Foods and the person I asked didn’t have a clue about erythritol and I didn’t see anything like the package you show above! I guess I will go back (maybe instead a bigger Whole Foods Store) and check again. Really wanted to bake a cake for my birthday.

    What makes these WEM? Is it the arrowroot powder and agave? I am a little confused why they are not FM

      I think it’s the agave. It’s an all natural sweetener but carb count is pretty high. Arrowroot powder is a natural thickener. I wouldn’t think the carb count is too high but I’ve never looked into it.
