Asian Cucumber and Edamame Salad (FM)

Ingredients:
1 cucumber, thinly sliced
1/2 cup frozen shelled edamame, run cold water through a strainer to thaw
2 tablespoon finely sliced red onion
2 tablespoon finely chopped red bell pepper
1 carrot, shredded
Dressing:
1/4 cup rice vinegar
1 teaspoon honey
1/2 teaspoon sesame oil
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon course sea salt
Instructions:
- In a small bowl whisk together the dressing ingredients (vinegar, sesame oil, honey, pepper flakes and salt)
- In a large salad bowl, toss together the cucumber, bell pepper, carrots, edamame and onion
- Pour over the dressing and toss well, let refrigerate until you’re ready to eat (tastes better if you let marinate for at least 30 minutes if you can) 🙂
