Asian Cucumber and Edamame Salad (FM)

Asian_Cucumber_and_Edamame_Salad

*Makes 1 Portion

Ingredients:
1 cucumber, thinly sliced
1/2 cup frozen shelled edamame, run cold water through a strainer to thaw
2 tablespoon finely sliced red onion
2 tablespoon finely chopped red bell pepper
1 carrot, shredded

Dressing:
1/4 cup rice vinegar
1 teaspoon honey
1/2 teaspoon sesame oil
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon course sea salt

Instructions:

  1. In a small bowl whisk together the dressing ingredients (vinegar, sesame oil, honey, pepper flakes and salt)
  2. In a large salad bowl, toss together the cucumber, bell pepper, carrots, edamame and onion
  3. Pour over the dressing and toss well, let refrigerate until you’re ready to eat (tastes better if you let marinate for at least 30 minutes if you can) 🙂
