Avocado, Kale & Goat Cheese Sandwich (WEM)

Ingredients:
1 large slice of sourdough bread cut in half
1/2 avocado, mashed
1/4 cup goat cheese
1 1/2 tbsp honey
2 tbsp dried cranberries
2 tbsp sliced almonds
1/3 cup baby kale
fresh berries
Instructions:
1. Mash the avocado, goat cheese and honey in a bowl.
2. Toast the bread in a toaster.
4. Spread a tbsp of the avocado mixture on each halve of the bread. Place even amount of kale on top of each slice and then top with even amount of the remaining avocado mixture.
5. Top it up with cranberries, sliced almonds and fresh berries.
