Bleu Cheese Salad (FM)

Salads are healthy, try this Blue Cheese Salad Recipe.

I made this Blue Cheese salad recipe this weekend out of the leftovers in my kitchen and it turned out to be amazing, so I wanted to share it with you. Salads should be on your menu on a daily basis in my opinion. It does not get any healthier than that. You have to eat veggies as much as you possibly can so you might as well try as many variations of different salads as you can to keep it fresh.

Ingredients:
spinach and romaine lettuce blend
baby portobello mushrooms
red bell pepper
avocado
tomato
crumbled bleu cheese
red wine vinegar
olive oil
salt & pepper to taste

Here’s what I did:

1. I washed some spinach and romaine lettuce in my salad spinner. The salad spinner is something I can really suggest for you to get if you don’t have it yet. It’s an easy way to wash your leafy greens and get rid of the remaining water at the same time.

2. I chopped some baby portobello mushrooms, red bell pepper, avocado, and heirloom tomato.

3. I added about 1/2 cup of blue cheese into the salad. That’s the key, because it makes the salad super cheesy and yummy. You don’t have to worry about the extra calories, because you won’t be able to eat the entire salad in one sitting by yourself. Also is full of veggies and fiber and goodness.

4. Drizzle the salad with red wine vinegar and extra virgin olive oil and toss the salad to get the dressing all over.

Little bit of Salt and Pepper to your taste and your simple and absolutely awesome salad is done. Enjoy and leave me a comment below 🙂

    The bit where it says ‘you can’t eat that in one sitting by yourself’ doesn’t apply to me lol! I love my veggies 🙂

    Zuzka, I made this for dinner last night but added some chicken breast to make it a complete meal. It was scrumptious! There is just something magical about the combination of mushrooms and blue cheese. Thanks for sharing another awesome recipe with us!
