Broccoli Mushroom and Chicken Stir Fry (FM)

Ingredients:
1 skinless, boneless chicken breast, cut into small cubes
1/2 cup chicken stock
1 teaspoon honey
1/2 tablespoon soy sauce
1 tablespoon fresh ginger, minced small
1 clove garlic, minced small
1 teaspoon sesame oil
1 1/2 cups of broccoli
1 cup of mushrooms
1/4 cup onion, diced
Instructions:
- In a bowl make the sauce, mixing together the chicken stock, honey, soy sauce, minced ginger, minced garlic and sesame oil. Whisk together and set aside.
- In a pan over medium high heat, drizzle on some olive oil then add chicken. Season with salt and pepper and saute the chicken until cooked through and slightly browned. Remove from pan and set aside.
- Using the same pan you cooked the chicken in, drizzle on some more olive oil and add the broccoli, mushrooms and onion. Stir fry for about 5-7 minutes.
- Whisk the sauce in the bowl to make sure it’s mixed well and then pour over the broccoli mix in the pan, stir together and let cook another 2-3 minutes then add chicken and stir together cooking for an additional couple minutes to warm the chicken.

Just had this for dinner tonight & it was great! I had it with some rice & it was like homemade takeout, I will definitely want to make this again!
