Butternut Squash & Asparagus Pasta (WEM)

Ingredients:
1/4 large butternut squash, peeled, seeded and diced
8 thick Asparagus stalks, chopped into 2 inch pieces
2 tbsp olive oil
1 cup brown mushrooms, sliced
1/3 of a large red onion, coarsely chopped
1 tbsp fresh rosemary, finely chopped
2 cloves garlic, finely sliced
1/2 cup hot water + 1/2 tbs vegetable bouillon (I use Better Than Bouillon)
3 tbsp dry white wine
1/4 cup coconut cream
1/4 cup vegan parmesan cheese (or nutritional yeast)
Salt & pepper
Instructions:
1. Get water boiling in a medium size pot for the pasta. Boil the pasta according to the package and add the diced butternut squash before the last 6 minutes of cooking. Drain and place it back into the pot.
2. In the mean time heat up the olive oil in a large skillet over medium heat and saute the onion and asparagus until onion softens and starts turning brown.
3. Add the rosemary, mushrooms, and garlic. Sauté for another minute.
4. Mix the bouillon in the 1/2 cup of hot water and then add into the skillet. Add the coconut cream, and wine. Mix, cover with lid and let it simmer on a low heat for 4 minutes.
5. Add the mushroom asparagus mixture from the skillet into the pot with pasta and gently toss. Serve with vegan parmesan cheese.

Hi Tanya, I guess that depends on how much each one needs per portion.
Here at home home we portion aprox 80 gr per person.
On a diet maybe a bit less.
